apple pie à la mode for breakfast

During the spring and summer, my favorite breakfast is vanilla Greek yogurt with granola and fresh berries. However, as the weather cools, I start to switch to warmer breakfast foods like oatmeal. Fall has so many wonderful flavors: pumpkin and all sorts of squash, sweet potatoes, and, of course, apples.


This breakfast treat combines my summertime favorite with the warmth and flavors of fall foods. Diced apples, sautéed with butter, spices, and granola, sits atop vanilla yogurt for the perfect start to an autumn day. It really does taste like apple pie à la mode!

Makes 2 servings

  • 1 large or 2 small apples, diced (unpeeled is fine)
  • 2 Tbsp butter
  • 1/4 tsp cinnamon
  • 1/8 tsp allspice (optional)
  • 1/8 tsp nutmeg (optional)
  • 1 Tbsp brown sugar
  • Pinch of salt
  • 2 servings vanilla yogurt

To make enough for two servings, dice one large apple or two small ones. Melt 2 tablespoons of butter in a pan. Add spices, salt, and brown sugar. Add in the diced apple, and stir until well-coated.


Once the apple is coated in the spices and starting to soften slightly, add in granola and stir until granola is coated in spices and warm. Do not cook long or the mixture will become mushy. Unless, of course, you like it mushy.


Spoon out yogurt into two small bowls and to with the apple-granola mixture. Prepare to be loved by the recipient of the second bowl.
